Fresh Market Tomato Salad

Farmers Markets are cropping up everywhere, offering an incredible selection of fruits and vegetables. Most provide a variety of fresh red, yellow and orange summer tomatoes. All of which need little embellishment to highlight their sweet, sun-ripened flavor.

 

Fresh Market Tomato Salad

Ingredients

  • 1 small yellow onion, sliced paper thin
  • ½ cup milk for soaking onions
  • ½ cup plain yogurt
  • 1-2 Tbsp fresh lemon juice
  • 1 clove garlic mined
  • 1Tps fresh chopped oregano
  • 1 ½ Tbsp fresh chopped basil
  • 2 tsp extra-virgin olive oil
  • 1 can solid white albacore tuna, drained
  • freshly ground pepper
  • 6 ripe tomatoes thinly sliced
  • 1 cucumber cross-cut into thin slices

Instructions

  1. Place the onion slices in a bowl and sprinkle with salt.
  2. Pour the milk over the onion and let sit for ½ hour
  3. Meanwhile in small bowl, whisk together the yogurt, lemon juice, garlic, oregano, basil, olive oil and S&P to taste to form together a vinaigrette
  4. Cover and refrigerate until needed
  5. Arrange the tomato and cucumber slices on a plate.
  6. Drain the onion slices and pat dry with paper towel
  7. Break up tuna with fork and spread over tomatoes
  8. Scatter onions on top of tomatoes and cucumbers
  9. Drizzle with vinaigrette
  10. add cherry tomatoes and slices hard boiled eggs
  11. Top with basil leaves
