Fettuccine with Golden Tomatoes and Bread Crumbs

Wedges of large yellow tomatoes or halved yellow-pear shaped cherry tomatoes make an attractive and tasty addition to this dish. Just before serving the pasta, mix the tomatoes with 1 Tbs extra-virgin olive oil in a frying pan over med-high heat and stir constantly until warm, 1-2 min. Then toss with the fresh pasta and tomato sauce

Fettuccine with Golden Tomatoes and Bread Crumbs

Ingredients

  • 1 cup very coarse bread crumbs
  • 2 Tbs extra-virgin olive oil
  • salt and freshly ground black pepper
  • ¾ lb dried fettuccine
  • fresh tomato sauce made with yellow tomatoes
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 375 degrees
  2. Spread the bread crumbs on a baking sheet.
  3. Drizzle with olive oil and toss to distribute the oil evenly
  4. season to taste with S&P
  5. Bake, tossing occasionally until golden brown 8-10 min
  6. Remove from oven and let cool
  7. Bring a large pot three-fourths full of salted water to a boil over high heat
  8. Add pasta, stir well until al dente about 10-12 min
  9. Meanwhile, heat the tomato sauce in a sauce pan over med-heat stirring occasionally until hot
  10. When the pasta is done, drain and transfer to a warmed bowl
  11. Pour on the tomato sauce, toss well and season with S&P
  12. Toss the bread crumbs with Parmesan cheese and sprinkle over the top
  13. Serves 6
