Barbecued Pork Ribs

Grilling over mesquite imparts a smoky flavor to meats. Watch the ribs closely turning to brown them evenly and removing them as soon as they are ready. For a smokier flavor , the grill is partially covered during cooking. Serve with corn on the cob and coleslaw for a traditional summer barbecue.

Barbecued Pork Ribs

Ingredients

  • 6lb pork spare ribs in 2 racks
  • S&P
  • BBQ sauce

Instructions

  1. Preheat oven to 350 degrees
  2. Arrange the ribs in a single layer on a baking sheet
  3. Season on all sides with S&P
  4. Cover with aluminum foil and bake until tender, 1 ¼ -1 ½ hours
  5. Prepare a fire in a charcoal grill
  6. While the coals are heating prepare a BBQ sauce {see my awesome homemade BBQ sauce recipe}
  7. Remove the ribs from the oven
  8. Place the ribs on a grill rack with space in between
  9. Partially cover the grill and cook for 5-10 min until golden brown
  10. Turn the ribs and baste with BBQ sauce
  11. Recover the grill and continue to cook for an additional 5-10 min
  12. Transfer ribs to a cutting board and cut between the ribs into individual pieces.
  13. Use remaining BBQ sauce to dipping
