Veal or Chicken it’s amazing either way. Very delicate dish in a wine, lemon and butter sauce that’s super easy to make and needs few ingredients. The key is to pound out your choice of meat to about 1/4”, this allows for very fast cooking time keeping the protein tender. Be sure to S&P both sides and lightly dredge in flour before adding to your hot pan drizzled with olive and butter.

Veal or Chicken Picatta

Ingredients

  • 2 (6 ounce) chicken breasts, butterflied and pounded thin
  • salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 clove garlic, chopped
  • 1/4 cup dry white wine
  • 1/2 cup chicken broth
  • 1 lemon, juice
  • 2 tablespoons capers
  • 1 tablespoon butter
  • salt and pepper to taste
  • 1 tablespoon parsley, chopped

Instructions

  1. Pound out Chicken or veal to about ¼ inch thickness being careful not to tear
  2. Season with salt and pepper. Dredge in flour and shake off excess.
  3. In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.
  4. Into the pan add garlic and saute for two min. Add wine and reduce by half, add lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.
