This recipe is the all time favorite Comfort Food in our Family. It’s luscious, and creamy texture will have your mouth watering for the next bite. Super simple to make with very few ingredients, this Soup will earn you respect in the kitchen.

Ingredients

  • Veg. Oil
  • 4-5 Russet Potatoes
  • 1 large Onion {Vidalia}
  • Paprika
  • Heavy Cream
  • Milk
  • 2-3- Tabs of Butter
  • Flat Leaf Parsley

Instructions

  1. In large soup pot add oil to just cover bottom
  2. Dice onion to about 1/4 inch and saute till translucent
  3. Peel potatoes and cube to about 1'/2 inch and add to pot
  4. Add 2 tablespoons Paprika stir well and cook for 5 min. Stirring frequently
  5. Add about 5 cups of water
  6. Cook potatoes until tender but not mashed consistency
  7. Turn down heat to med low and add 1cup heavy cream and 1/2 cup milk
  8. Simmer for about 1/2 hour and with potato masher smash about half of the potatoes to create a thicker consistency.
  9. The starches and heavy cream will thicken the soup
  10. Add butter
  11. The soup will require S&P.
  12. Salt will bring out the flavor of the potatoes
  13. Garnish with a pinch of Parsley and dollop of sour cream.
